Rice pudding

2 eggs
1 pkg. vanilla pudding mix (cook type)
1/2 cup sugar
1 can condensed milk
2 cups water
2 cups cooked brown rice

Combine eggs, pudding mix, sugar and condensed milk. Add 2 cups water, then add cooked brown rice. Bring to a boil over medium heat, stirring constantly to keep from burning. Cool at room temperature, garnish with cinnamon, nutmeg, or blackberries.

My dear friend, S., absolutely loves rice pudding! For this reason, I am passing this easy recipe on to her. With finals week upon us, a little comfort food is much-needed just about . . . now.
